Blu-Cherry Salsa


1 anaheim pepper, halved, seeded, and finely chopped
4 green onions, thinly sliced
1 tablespoon honey
Grated peel and juice of 1 lime
1 tablespoon chopped fresh mint
¾ pound dark sweet cherries, pitted and quartered (about 2 cups)
1 cup blueberries


In medium bowl, combine pepper, green onions, honey, lime peel and juice, and mint; stir to combine. Let stand 1 to 2 hours to develop flavors. Just before serving, add cherries and blueberries; gently toss to combine.
Makes about 3 cups


Saucy Idea   Place an 8-ounce package of cream cheese on serving plate. Spoon Blu-Cherry Salsa over top. Serve with crackers or chips.
