Summer Fruit Relish


1 small cantaloupe, peeled, seeded and finely chopped to make 2 cups
1 nectarine, pitted and chopped
1/4 cup chopped onion
1/4 cup golden raisins
1/2 cup firmly packed brown sugar
1/2 cup cider vinegar
1 tablespoon freshly grated orange peel
1/2 teaspoon salt
1/4 cup chopped green pepper


In large non-corrosive saucepan, combine all ingredients except green pepper. Bring to a boil over medium-high heat. Reduce heat and simmer, uncovered, for 1 hour, stirring frequently. Add green pepper; continue to simmer for 30 minutes, stirring frequently until liquid has evaporated and relish is thick. Chill. Makes 1 cup


This relish tastes even better when you allow the flavors to mellow for several days before serving.
