California Pork Kabobs


1 pound pork tenderloin
1/4 cup reduced-sodium soy sauce
3 tablespoons vegetable oil
2 tablespoons honey
1/2 teaspoon ground ginger
4 fresh nectarines, cut into wedges
2 zucchini, cut into 1/2-inch slices
1 onion, cut into wedges


Trim tenderloin, if necessary; cut into 1-inch cubes. In medium bowl, stir together soy sauce, oil, honey, and ginger. Place pork cubes in mixture; cover and refrigerate overnight. Remove pork, reserving marinade. Thread pork cubes, nectarines, zucchini, and onion onto skewers. Place reserved marinade in small saucepan. Heat over medium-high heat to boiling; boil 2 minutes. Place kabobs on grid over medium-hot coals; brush with marinade. Grill about 7 to 10 minutes. Turn, brush with marinade, and grill an additional 5 minutes, or just until pork is tender.
