Cool Bean Salad


⅓ cup red wine vinegar
¼ cup Dierbergs extra virgin olive oil
3 tablespoons honey
½ teaspoon coarse salt
Freshly ground black pepper
1 can (15 ounces) great northern or navy beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
½ cup diced red bell pepper
½ cup finely diced red onion
¼ cup thinly sliced green onion
2 tablespoons chopped Italian parsley


In large bowl, whisk together vinegar, olive oil, honey, salt, and pepper. Add remaining ingredients; gently stir until well mixed. Cover and chill at least 2 hours to develop flavors.
