Grilled Shrimp with Fire-Roasted Cocktail Sauce


1 tablespoon olive oil
½ teaspoon garlic salt
16 jumbo (16 to 20 count) shrimp, peeled and deveined
Wooden skewers, soaked in water 30 minutes
Fire-Roasted Cocktail Sauce
1 tablespoon chopped Italian parsley
1 lemon, cut into 8 slices


In large bowl, stir together olive oil and garlic salt. Add shrimp; toss until well coated. Thread shrimp in “C” shape onto skewers. If desired, slide second skewer into shrimp parallel to first skewer to prevent shrimp from twirling. Place skewers on grid over medium-high heat; grill until shrimp are pink and firm, about 3 minutes per side.

To serve, spoon Fire-Roasted Cocktail Sauce into 4 martini glasses. Top each with 4 shrimp. Garnish with Italian parsley and lemon slices.
