Peach Olive Oil Cake


3 Peaches, peeled and sliced thinly
2 ½ cups flour
½ teaspoon baking soda
½ teaspoon baking powder
2 cups brown sugar
1 teaspoon salt
1 ¼ cups Dierbergs Pure Olive Oil
1 ¼ cups buttermilk
¼ cup orange or lemon liquor or orange juice
3 eggs


Preheat oven to 350°F. Spray a 10 inch round cake pan or 9x13 baking dish with non-stick baking spray. In a medium size bowl mix together all dry ingredients. Add wet ingredients to bowl and mix till smooth. Pour batter into cake pan and place peach slices on top. Bake for 40-45 minutes for 9x13 baking dish or 55-60 minutes for 10 inch round cake pan or till cake is set in middle. Serve with vanilla ice cream or sweetened yogurt.
