This quick entrée is a delicious way to add nutritious seafood to your diet.1 pound frozen tilapia fillets, thawed
1/4 cup Italian seasoned bread crumbs
2 tablespoons grated parmesan cheese
1 teaspoon garlic salt
1 teaspoon grated lemon peel
3 tablespoons butter (divided)
1 tablespoon vegetable oil
2 tablespoons lemon juice
Rinse fish and pat dry. Cut fillets in half lengthwise. On sheet of waxed paper, combine bread crumbs, cheese, garlic salt, and lemon peel. Place 2 tablespoons of the butter in glass pie plate. Microwave (high) for 30 seconds. Dip fillets in melted butter; coat with crumb mixture. In large nonstick skillet, melt remaining 1 tablespoon butter with oil over medium-high heat. Cook fillets until fish flakes easily with tines of fork, about 2 to 4 minutes per side. Sprinkle with lemon juice.
