Fried Rice with Tempura Chicken

Start with the Rice

Use chilled, cooked rice – preferably leftover - to get the perfect chewy texture. Warm, freshly-cooked rice is too sticky. In a hurry? Spread freshly cooked rice on a sheet pan and put it in the freezer for a few minutes for a quick cool down.

Next Come the Veggies

Cut them all about the same size so they cook evenly. Do this the night before. Or stop by Dierbergs Produce Department and pick up diced carrots, green peppers, onions, Mann’s broccoli and cauliflower.

Then cook this way…

  1. Dense veggies first – broccoli, cabbage, carrots, cauliflower, green beans.
  2. Medium veggies next – asparagus, bell pepper, kale, mushrooms, onion, snow peas.
  3. Tender veggies last – bok choy, chick peas, corn, napa cabbage, tomatoes, zucchini.

Tempura Chicken


Throw in a little cooked meat, poultry, or seafood at the end. Cut, dice, or shred into same-size pieces and add along with the egg (see Mushroom Fried Rice Recipe).
